Easy Easter Bunny Cookies for Kids

I'm not much of a baker, so when I found a three ingredient Easter cookie recipe I was like "yep, ideal." It meant I could do something fun and Easter themed with the kids without completely losing my mind in the process. These were a winner.

What you need
• 1 packet of sweet short pastry
• Candy coated mini eggs
• 100s and 1000s / sprinkles
• A gingerbread man cookie cutter
• Something pointy, a skewer or toothpick works perfectly

We tipped the chocolate eggs and sprinkles into a couple of Zazi Clever Bowls — once you're done you just pop the lid on any leftovers rather than trying to find a container or funnel sprinkles back into tubes.


How to make them
Preheat your oven to 180°C and let your pastry thaw if it's been in the freezer.

Lay your Zazi Clever Mat or baking paper flat on the bench. Cut your gingerbread man shapes straight onto it so they don't stick, and they're already in place ready to decorate and bake.

Here's the clever bit: flip the gingerbread man upside down so the legs become the bunny's ears. Place a mini egg between the arms and fold the arms over so the bunny is holding it.

Use your skewer or toothpick to press small indentations above the egg for the eyes and nose, then drop a sprinkle into each hole.

My kids took one look at the sprinkles and decided the whole cookie needed covering. We went with it.

If the pastry has gone quite soft, pop the tray in the fridge for ten minutes to firm up before baking.

Bake for 6 minutes and leave them on the tray to cool. They'll be soft straight out of the oven and firm up as they cool.



One last thing
Did our bunnies look perfect? Nope. Do kids care about that? They do not. It's about the connection and the fun and celebrating Easter together. Try not to get hung up on them looking a certain way.
